Damian Clisby x His Mentors
Damian Clisby is a chef of national repute but startling modesty. He has been chef-director at the Michelin starred Petersham Nurseries and run his own restaurant -Emile- too.
Most recently he has joined us in Hawarden to oversee the kitchen at our Farm Shop, pub, events space and at the Good Life Society, too.
Here he talks with Charlie about his mentors.
I cook. It’s my way of sharing with people, of coming together, laughing and sharing stories. This is why I became a chef. My first mentor was my grandfather, Emile.
I am often asked, “What’s your favorite dish, ingredient or season?”. There are so many and all hold their own unique qualities, or are particularly prevalent at a certain moment in the season. How doses one choose? For me it’s almost an impossible task to choose one above the other.
To think of one particular mentor carries the same dilemma. Adam, Marcellan and Derek taught me really how to cook, Joe taught me to be patient, Lucy to cook by eye and Lewis to always see the best in people. My mother never to give up, stay strong. There have been so many along the way.

During my career Adam Byatt has always held his door open and I have often shared a coffee with him seeking his advice. A truly inspirational leader.
I have been very fortunate to work with some amazing, talented people and I hope in some ways that I have been a Mentor to them along the way.
Like with the seasons all is transient and right now my fiancé is my mentor. Knowing me inside out she knows when to say “slow down” or “you can do anything you want” or “be patient”, “laugh” and of course “no that is not a good idea you silly twit!”
